PIZZA IN KAFROS VILLAGE OF MIDYAT: A LEGENDARY FLAVOR
Abstract
This study examines the emergence, development, and contributions to regional gastronomy tourism of a traditionally prepared pizza that has recently gained recognition at both local and national levels in Kafros “Elbeğendi” Village ,located in the Midyat district of Mardin .This distinctive type of pizza ,shaped by the cultural heritage of the local Syriac community ,is notable for being baked in traditional stone ovens and for its use of local ingredients such as goat cheese ,za’atar ,tomatoes ,homemade tomato paste, and thin dough. What began as a local production initiative in the village gradually expanded to regional markets and reached a broader customer base through social media ,thus creating a new attraction for gastronomic tourism.A qualitative research methodology was employed in the study ,and data were collected through media scanning and subsequently analyzed. The findings indicate that the Kafros pizza represents more than just a food product ; it also holds significant potential in terms of rual development and cultural promotion. In this context ,the study emphasizes the importance of integrating local gastronomic products into sustainable tourism strategies while preserving their authenticity.
